Ah... I've seen a different maple bacon cookie recipe that also includes chocolate chips. Then there's maple icing on top, plus a square of bacon, so that would be interesting without needing the rhubarb.
That sounds good. I'm not sure about the square of bacon though--would it be better as a chocolate chip cookie with bacon on top, or a bacon cookie with some good dark chocolate on top? I think I'd prefer the second. But either one sounds real good.
Bit I liked the rhubarb. And at least one other person said the rhubarb made the cookie. :S
I thought they were good. And the rhubarb was the sine qua non of the cookie.
