Bacon Maple Rhubarb Cookies

Here's the basic recipe. But I decided to add pickled rhubarb on top.  In my opinion, the rhubarb made the cookie.  Without further ado, pictures:

Apple Bacon Fritters

I really like playing around with ingredients that sound like they shouldn't work.  Rhubarb as the highlight of a main course, for instance.  (No pictures, but I should probably put up the recipe.)

As such, I'm quite intrigued by these.
